Next week, Amanda and I will be hanging up our aprons and taking a small break from meal planning as we will be celebrating our 10th wedding anniversary. There are two bank holidays in France during the week. The first, on the 8th May, is Victory in Europe Day (VE Day) which marks the end of World War II. The second holiday is Ascension Day and is on the 10th May which is also our wedding anniversary. We are planning a short road trip in the South of France where we hope to eat some great food, drink good wine and pick up some new ideas for recipes for future Bon App meal plans.
Monday: Salmon with fennel, cucumber and bulgur wheat salad
Fennel and cucumber are two of the vegetables that are in season this month. In this recipe, I’ve mixed them with bulgur wheat to create a salad that is served as an accompaniment to grilled salmon.
Tuesday: Warm goat’s cheese on artichoke hearts
This was Amanda’s reaction when she ate this meal “OMG this recipe is to die for! Warm melted yummy goat’s cheese on artichoke hearts. I’m in heaven!” Enough said!
Wednesday: Aubergine stuffed with Turkish style lamb
Europe Day, held on 9th May, celebrates peace and unity in Europe. It is observed in various forms in most member states of the European Union and EU candidate countries such as Turkey. You can join in the celebrations with my aubergine stuffed with Turkish style lamb recipe.
Thursday: Spaghetti alla carbonara
Carbonara is an Italian pasta dish from Rome, usually made with egg, Pecorino Romano, pancetta and pepper. My version uses Parmesan and bacon lardons. You can swap spaghetti for linguine or fettuccine as all three are ideal for cooking the egg perfectly.
Friday: Turkey burger with sweet potato chips
This is a wonderful Friday night dinner and is perfect to celebrate Eat What You Want Day! And you won’t believe that these super crunchy sweet potato chips are made with hardly any fat which will make you feel better about eating what you want for dessert!
