The summer months of July and August are the months where there are the most different varieties of fruits that are in season. The fruits that are in season in July are; Apricot, Banana, Blackcurrant, Blueberry, Cherry, Fig, Lemon, Mango, Melon, Peach, Plum, Raspberry, Redcurrant, Strawberry and Watermelon. This is good news for me as I love to make fresh fruit smoothies for breakfast so have lots of fruits to choose from.
There are also lots of vegetables that are in season this month too and I have included just some of them in this week’s meal plan; tomatoes, cucumber, green beans, red and yellow pepper.
Monday: Citrus sea bass
I love the amazing summer colours in this citrus sea bass recipe. The citrus fruits give a bit of peps to the tender, mild flavoured sea bass with its lovely buttery quality. Definitely a dish to be served at the table to make the most of the appetising colours.
Tuesday: Greek salad with bulgur wheat
This week I wanted to turn classic starters into a main meal and so to make a Greek salad a bit more filling I added bulgur wheat. Now it’s got the carbohydrates, protein and vegetables that are needed for a balanced meal.
Wednesday: Tunisian chakchouka with merguez
I am proud to feature in this week’s meal plan, one of the classic recipes from my dad’s mum: the Tunisian Chakchouka! This is an incredible dish, full of summer vegetables combined with the flavours from Tunisia. This is definitely a must try, and hopefully one that will feature in your favourites from now on!
Thursday: Tomato & mozzarella pasta salad
This recipe is a tomato & mozzarella pasta salad accompanied by tagliatelle. I wanted to transform the traditional tomato & mozzarella salad, that is normally eaten as a starter, into a more filling main dish. This is a really good meal for summer and I hope you like it!
Friday: Mustard chicken legs with roasted potatoes and green beans
I always try to include a few recipes in my meal plans that have virtually no washing up. This mustard chicken legs with roasted potatoes and green beans recipe is simply baked on one tray in the oven. Which leaves more time to relax and enjoy spending time together with your loved ones.
