Will it be trick or treat for you on Wednesday night?
This week’s meal plan has a pumpkin recipe specifically designed to use up any leftover pumpkin If you are planning on carving some up for Halloween. Pumpkin also happens to be one of my favourite autumn vegetables so I’ll definitely be buying some pumpkins to eat and not just for Halloween!
Thursday is All Saints Day and we will be having a bank holiday here in France. We’re planning on packing away all the garden furniture and bringing in the plants that can’t stay outside during the winter. I’m sure we’ll be raking up some of the leaves from the garden too and hopefully collecting the last few ripened figs from the fig tree. So we’ll be looking forward to warming ourselves up after a hard day out in the garden with Thursday’s mustard chicken recipe.
Monday: Mexican cod bowl
We start the week with a Mexican meal in a bowl with lots of different textures and flavours – crunchy beans, creamy avocado and delicate cod. I prefer to use brown rice in this dish as it has a little more flavour but feel free to use white rice instead and reduce the cooking time.
Tuesday: Red lentil farfalles
The vegetarian dish on the meal plan this week is a red lentil pasta. I added the lentils to add some protein to the dish and made the sauce using mushroom, carrot and pepper to add to my 5 a day.
Wednesday: Pumpkin soup
Tonight, we celebrate Halloween with a warming pumpkin soup with melting cheese toast. Pumpkin is one of my favourite autumn vegetables and my favourite way to eat it is in a gratin but this soup recipe comes second best at giving me my pumpkin fix.
Thursday: Mustard chicken & quinoa
I would recommend to use baby spinach in tonight’s chicken quinoa with mustard sauce recipe as “grown up” spinach will be a bit too tough and earthy for the dish.
Friday: Smoked salmon rosti
We end the week with oven-baked rösti. I was inspired by English jacket potatoes but wanted to create something quicker for a weekday meal. You’ll be amazed at how crispy the oven-baked rösti are. There is no need to fry them.
