Food waste is something that Amanda is passionate about. She hates throwing away food that has gone bad, whether it’s leftovers that we didn’t eat or something that has wilted before we got to it. That’s why she’s helped me put together this list of 10 ways to stop wasting food.
One of the tips is to turn leftovers into something new and exciting. If you are cooking the salmon and broccoli quiche from this week’s meal plan, you may find that you have leftover puff pastry. You can freeze any remaining pastry to use another time for something new.
Monday: Toad in the hole
Toad in the what!!!! A dish consisting of sausages in Yorkshire pudding batter, usually served with onion gravy and vegetables. The origin of the name is unknown but it is often thought to refer to the sausages peeking out from the holes in the batter!
Tuesday: Coconut chicken curry
A simple coconut and tomato based curry that is not hot and so perfect for anyone new to curry. Serve with basmati rice which is traditionally from India.
Wednesday: Tuna and rocket spaghetti
This tuna and rocket spaghetti meal can be eaten warm for dinner or can be packed in a lunch-box to eat as a healthy salad for lunch at work.
Thursday: Fried eggs with chorizo and beans
Yes, it’s eggs and beans! Not of the tinned variety but of the homemade variety with bags of flavour coming from the chorizo and herbs. It’s well worth the extra time needed to cook the beans versus opening a tin, I promise.
Friday: Salmon and broccoli quiche
A quiche is so quick to prepare and with an infinite number of possibilities for ingredients. For this recipe, I have opted for a combination of smoked salmon and broccoli.
