It’s National Garlic Day in the UK next Thursday and to celebrate, I’ve included garlic in the stuffing that goes into the oven baked sea bream. You can also celebrate by serving the fish accompanied by a bulb of roasted garlic.
To roast garlic: chop off the tip of garlic head, add swig of olive oil and then roast in the oven for 1hr at 180 degrees. Remove the garlic with a teaspoon and add to the sea-bream.
Monday: Chickpea, avocado and feta salad
A simple chickpea, avocado and feta salad full of vibrant spring colours and flavours. Ready in under 15 minutes for an easy and quick dinner.
Tuesday: Chicken with pan-fried mushrooms, potatoes and broccoli
This delicious pan-fried chicken and vegetables dinner comes together quickly and is guaranteed to please. I would recommend cooking the chicken on a griddle pan, if you have one, as it gives it that nice barbecued chicken look.
Wednesday: French onion and gnocchi soup
French onion soup is a classic dish that originated in Paris in the 18th century. I’ve add gnocchi instead of croutons and red wine instead of white wine to this version. The red wine gives a rich flavour as if the onions have been caramelising for hours!
Thursday: Oven-baked sea-bream on vegetables
Sea bream is a delicate white fish that is best cooked simply, as in this oven baked sea bream on a bed of vegetables. Stuffing the fish with herbs and garlic releases their flavour into the fish making a delicious dish
Friday: Penne alla vodka
This pasta dish is made of a creamy sauce mixed with tomatoes which is a combination unusual in Italian cooking because the acidity of the tomatoes tends to make the oil in the cream separate. The vodka keeps the water and the oil mixed together and also releases additional flavour from the tomatoes.
