I don’t know about you but at this time of year, I fancy curly up on the sofa with a big blanket and eating steaming hot food to warm me up. In this week’s meal plan, I’ve included some autumn inspired recipes that are the perfect comfort food.
Monday: Almond trout with steamed potatoes
Trout and almonds are one of those classic recipe combinations that has been around for a very long time. There is a very simple reason why it’s a classic, because the combination works so well!
Tuesday: Cannellini bean tomato soup
A tomato soup is something that feels so warming on a cold blustery autumn day. This version with cannellini beans and spinach is a hearty soup that will warm you.
Wednesday: Autumn vegetable spaghetti
Sometimes Autumn can feel a bit depressing with the days getting shorter and the cold wet weather. One thing that I look forward to is the autumn vegetables. This recipe uses one of my favourites, butternut squash.
Thursday: Thai chicken with vegetables
This Thai recipe is a nice mild one with chicken, vegetables and coconut milk. If you’re like me and like your Thai recipes spicy hot, then add some chilli powder and ginger when cooking the chopped shallots.
Friday: Crust-less spinach quiche
A quick and easy crust-less spinach quiche recipe that uses eggs, spinach, mushrooms and smoked bacon lardons. I’ve used feta cheese in this recipe but you can easily swap it for goat’s cheese.
