It’s Healthy Eating Week in the UK next week and the aim is to all come together to focus on healthy eating, drinking, and physical activity.
There are five challenges at the heart of Healthy Eating Week, these are:
- Have breakfast: choose wholegrain or higher fibre foods
- Eat 5 a day: go for a variety of fruits and vegetables
- Drink plenty: water is the best choice
- Get active: move more and try to be active every day
- Make a change: set yourself a goal
We are taking part by checking how we shape up against the healthy eating week challenges and setting ourselves some positive lifestyle goals.

In this week’s meal plan, I will show you how to make vegetables more exciting for everyone, by turning carrots and courgettes into tasty tagliatelle.
Monday: Salmon steak with vegetable tagliatelle
Nope it’s not vegetables and tagliatelle, it’s tagliatelle made from carrots and courgettes! It’s really easy to make vegetable ribbons with a peeler that has a horizontal blade. I can’t stop raving about it to anyone that will listen as I truly find it super quick and easy!
Tuesday: Melon, Parma ham and feta cheese salad
I am going through a phase of putting all sorts of fruits in salads and this one is a perfect salad for a hot summer’s day; melon, parma ham and feta cheese. I hope you enjoy it!
Wednesday: Tagliatelle with red bean croquettes
This is a bit like spaghetti meat balls but with no meat! When I tried this for the first time, I was totally amazed at how tasty the red bean croquettes are. Dishes like this could convince me to turn vegetarian!
Thursday: Vegetable tortillas with tomato salsa
I created this recipe because I wanted a meat free dish on the menu and something with eggs as the main ingredient. I thought about a frittata, which means “fried” in Italian. I decided to use the name tortillas instead, because this recipe is cooked in the oven. Whichever name it has, it’s a tasty omelette full of veg with a zingy salsa.
Friday: Paprika chicken drumstick with roasted vegetables
Throw the ingredients on a tray or on the BBQ. Crack open a few beers and chillax, dinner is done! Enjoy!
