Ingredients:
1 whole sea bass (500g)
80g rice
2 tomatoes
1 lemon
1 orange
0.5 red onion
1 clove of garlic
1 bay leaf
0.25 bunch of fresh thyme
Steps
- Stuff the fish with the thyme, parsley, bay leaf, slices of garlic and a few slices of lemon and orange. Season and set aside.
- Layer quarters of tomatoes and onion and slices of lemon and orange on a baking tray. Place the fish on top with a swig of olive oil and lemon juice. Cook at 200 degrees for 20 mins. During this time, cook the rice. Serve the rice with the fish and pour over the cooking juice.
Tips
- Ask your fishmonger to remove the bones from the sea bass.
- Replace fresh thyme by dry thyme.
