It’s really starting to feel like winter where I live and has even been snowing this week! There’s nothing more comforting than warm food when it’s cold outside. Sometimes warming winter food can take far too long to make. One of my key principles is that 4 out of 5 of my recipes must be under 30 minutes, even in winter! My Friday recipes are usually a little longer to make but I always ensure they can be made in under an hour.
I hope this week’s meal plan will keep you warm and cosy.
Monday: Haddock Gratin
On the meal plan this week is a haddock gratin. Haddock can be quite a salty fish so I would recommend to soak it in milk prior to cooking if you have time. I hope you’ll enjoy the smoky flavour of this lovely dish.
Tuesday: Autumn chakchouka
Next up is an Autumn chakchouka recipe: warm eggs cooked over a bed of Swiss chard and goat’s cheese. If you fancy heating it up a bit, feel free to add fresh chilli.
Wednesday: Chicken and mushroom casserole
One of the tricks that chefs use to keep their vegetables vibrant in colour, is to plunge the vegetables in cold water once cooked. Then you quickly drain them again so they don’t cool down too much. I used this top tip for the broccoli which accompanies tonight’s chicken and mushroom casserole.
Thursday: Chickpea penne pasta
Chickpeas are full of protein which makes them a great alternative to meat and so I decided to make a pasta sauce out of them. If you love humus, then you’ll love the sauce in this chickpea penne pasta recipe.
Friday: Chicory and goat’s cheese Tatin
My Friday recipe does take a little longer to make but boy is it worth it! I love this tasty way to eat chicory and to revisit the classic Tarte Tatin. The blend of the goat’s cheese and the balsamic vinegar make it lovely and indulgent.
