Monday: Red bean hamburger with corn on the cob
These burgers are bursting with flavour and make a nice change from a beef burger. Serve them with corn on the cob which you can cook on the BBQ if the weather is good or you’re lucky enough to be on holiday!
Tuesday: Beetroot tartare
A tartare doesn’t need to be only reserved for red meat lovers. Try this vegetarian version with beetroot, avocado and green apple, seasoned with lime juice. An amazing blend of flavours and colour.
Wednesday: Dill salmon on a bed of multi-coloured noodles
The mid-week meal combines summer vegetable noodles with pasta noodles, served topped with grilled salmon. A healthy delicious meal, rich in warm colours.
Thursday: Cucumber gazpacho with tomato bruschetta
Next, there is Italian bruschetta covered with deliciously fresh tomatoes. Serve with a cucumber gazpacho and you have a light weekday meal perfect for a warm evening. If you fancy a more filling dish, simply increase the number of bruschetta toasts per person or get creative by adding crushed garlic, chopped onion and dices of cheese (e.g. mozzarella or gorgonzola), or by adding chopped onion and slices of smoked salmon.
Friday: Turkey and balsamic vegetables
Tonight’s meal is turkey escalope and balsamic vegetables, simply cooked on an oven tray. An easy Friday night meal that is perfect after a long week at work with hardly any washing up.
