A new month brings with it lots of new vegetables that come into season, exciting! This week’s meal plan has asparagus and tomatoes which are just some of the vegetables that are in season in May. It also includes Hake, which is one of the types of fish that are in season this month. I’ve uploaded my new infographic which shows what’s in season in May.
It’s also Star Wars Day on Friday and May the fourth be with you! I have created a dark and light side recipe for you to be able to celebrate with my hake brandade with tapenade. You could also celebrate by hosting a Star Wars party with prizes for the best costumes or have a Star Wars film marathon.
Monday: Red bean stuffed avocado
A tasty vegetarian recipe to start the week. If the avocado’s you buy aren’t quite ripe yet, then I recommend putting them in a paper bag with a couple of bananas for a few days as the banana’s help them to ripen.
Tuesday: Thai prawn soup
Thai food is one of my favourites. I love the flavours of galangal, Thai lime and chilli. I just can’t get enough of it, which is probably why I’ve been to Thailand 5 times! Hope you like my version of Thai prawn soup.
